- 1 pound of corned beef, diced
- 3 russet potatoes, peeled and cubed

- 1 cup of shredded cheddar cheese

Instructions:
- In a large pot, cook the corned beef over medium heat until browned.

- Add the potatoes, chicken broth, and corn kernels. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the heavy cream and cheddar cheese, and simmer for an additional 5 minutes, or until the cheese is melted.
- Season with salt and pepper to taste.

Slow Cooker Corned Beef

Ingredients:
- 1 (3-pound) corned beef brisket
- 1 onion, sliced
- 4 cloves of garlic, minced
- 1 cup of beef broth
- 1 tablespoon of pickling spice
- 4 red potatoes, quartered
- 4 carrots, cut into 2-inch pieces
- 1 head of cabbage, cut into wedges
Instructions:
- Place the onion and garlic in the bottom of a slow cooker.
- Trim any excess fat from the corned beef brisket and place it on top of the onion and garlic.
- Add the beef broth and pickling spice to the slow cooker.
- Cover and cook on low for 8-10 hours.
- Add the potatoes, carrots, and cabbage to the slow cooker. Cover and cook for an additional 1-2 hours, or until the vegetables are tender.
- Remove the corned beef from the slow cooker and let it rest for 5 minutes before slicing.
- Serve the sliced corned beef with the vegetables and enjoy!

Corned Beef Casserole

Ingredients:
- 2 cups of corned beef, shredded
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can of cream of mushroom soup
- 1 cup of sour cream
- 1 cup of shredded cheddar cheese
- 1 cup of breadcrumbs
- 2 tablespoons of butter, melted
Instructions:
- Preheat the oven to 350°F (175°C) and grease a casserole dish.
- In a large skillet, sauté the onion and garlic until softened.
- In a separate bowl, mix together the cream of mushroom soup, sour cream, and shredded cheddar cheese.
- In the greased casserole dish, layer half of the shredded corned beef, followed by half of the sautéed onion and garlic mixture.
- Spread half of the soup mixture over the corned beef and onion layer.
- Repeat the layers with the remaining corned beef, onion and garlic, and soup mixture.
- In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
- Serve hot and enjoy!

Corned Beef and Bean Soup

Ingredients:
- 1 cup of corned beef, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 3 carrots, diced
- 3 stalks of celery, diced
- 1 can of white beans, drained and rinsed
- 4 cups of beef broth
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, sauté the onion and garlic until softened.
- Add the corned beef, carrots, celery, white beans, beef broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until the vegetables are tender.
- Remove from heat and let cool slightly.
- Using an immersion blender or a regular blender, purée the soup until smooth.
- Return the soup to the pot and reheat if necessary.

Ingredients:
- 3 pounds of corned beef brisket

- 4 cloves of garlic, smashed
- 1 teaspoon of black peppercorns

- 1 pound of baby potatoes
- 4 carrots, cut into 2-inch pieces
- 1 cup of beef broth
Instructions:
- Preheat the oven to 325°F (165°C).
- Place the corned beef brisket, onion, garlic, and peppercorns in a large Dutch oven or roasting pan.
- Add enough water to cover the corned beef by 1 inch. Cover tightly with a lid or foil.
- Braise in the preheated oven for 2 1/2 hours.
- Remove the corned beef from the oven and skim off any excess fat.
- Add the cabbage, potatoes, carrots, and beef broth to the pan with the corned beef.
- Return the pan to the oven and braise for an additional 1 hour, or until the vegetables are tender.
- Slice the corned beef against the grain and serve with the vegetables.
